ServSafe® Food Safety - TN state law requirement expected in January 2008!
The ServSafe® program provides the resources to help keep food safety as an essential ingredient in every meal. This ServSafe® food handlers course meets the requirements for manager certification in the food service industry. The course provides food safety information that can be utilized in the home, day cares, schools, etc. Certification is achieved by passing an approved multi-choice exam, and a ServSafe® certificate is given upon successful completion. Those who complete this course will receive recognition from the International Food Council and permanent registration in the National Restaurant Association Educational Foundation's National Registry. The instructor is Kashi Farmer, Food Scientist and owner of White Glove Restaurant Solutions™.
Participants must register at least 10 days before the class begins for materials to be ordered.

Financial Workshop for Individual Investors

The workshop begins with the very basics of finances, including examining some of the most common reasons why people fail to meet their investment goals, some money management tips that can help make sure you don't fall into those traps and rules that every investor should know and follow. Wine Appreciation
Participants will learn how to identify the basic types of wine, how they are made, how to perform sensory evaluation techniques and how to describe properties of wines. Participants will also evaluate different types of wine such as sparkling, dry and sweet, and dessert. Colonial Cookery  NEW!!
This unique and most informative class will cover early American baking and cooking as it was done during the Colonial period, before and during the War for American Independence. Covered are such little known things such as how the woman of the house baked in the oven of a fireplace; how temperature was determined since no gages existed at that time; making yeast since none was available in stores as it is today; kinds of food available to the Colonists; and much, much more. Various old-time recipes will be shared with the students. Some are the original recipes exactly as they were written for the Colonial cook or baker; others that have been carefully updated for today’s kitchen. The student will be able to return home and make the identical food items as those that were enjoyed by the Colonists. In addition you will learn historical facts about families that used the recipes, customs, and superstitions relating to food in the Colonies. Instructor Robert Pelton has published hundreds of feature articles and more than 60 books including seven historical cook books.

In partnership with Pellissippi State's Computer Science and Information Technology Department, a unique, new opportunity to learn and use various computer games, robot devices, and virtual reality environments is being provided. Some of these classes will go beyond using, playing, and learning games to actually developing your own programs using today's easy-to-use game development tools and assembling, then programming, a robot. Have fun in the fascinating world of virtual reality cyber-space, learning about open source gaming, trying your hand at making and programming a robot, and learning about how to develop your own unique, personal games. Introduction to Virtual Reality Using Second Life  NEW!!

Open Source Resources for Gaming  NEW!!

Large-scale multiplayer games require dedicated infrastructure of servers to provide reliable gaming environment. The load on the gaming infrastructure can vary depending on several parameters like number of online subscribers, user interaction level, type of game, and player population. The Linux operating system provides scalable and stable on-demand gaming environment based on open standards. Gaming infrastructure servers can be combined into a cluster farm using Linux to provide uninterrupted and reliable services. Students will learn about open source software and games. They will install Linux operating system to play games, and will learn about tools and techniques to create large scale gaming and visualization clusters.

Introduction to Lego Mindstorm Programming  NEW!!

This class is designed to introduce students to the visual programming language used to program the Lego Mindstorm robots. Students will be divided into two groups with each group building and then programming a robot created with the Lego Mindstorm kit. Participants will learn a bit of the history of robotics, how to use Lego Mindstorms to create robots, the basic building blocks of computer programs and how to program the Lego Mindstorms using Lego's visual programming language. Handgun Safety

Handgun Safety Course:
TN Handgun Carry Permit Class

Completing the Tennessee State Handgun Safety Course for the handgun carry permit is required before application can be made for the state permit. Course content includes handgun parts, function & operation; handgun safety, cleaning & storage; legal responsibilities for carrying a handgun; course review & testing; and firing range exercises. The classroom portion is conducted at the Pellissippi State campus off Hardin Valley Road. Participants then go to the John Sevier Range on Rifle Range Road, where the firing exercises are held. Four-five hours classroom time + 3 hours range time. Upon satisfactory completion of the course, participants are given the necessary certificate to apply for the state carry permit at their nearest Department of Safety office. The instructor is an NRA certified firearms instructor and Tennessee certified handgun instructor. $5.50 range fee payable to instructor.

This course is designed to present the basic knowledge, skills, and attitude necessary for the safe handling and storage of all types of guns in the home. Topics covered are the rules of safe gun handling, how to load and unload firearms, types of ammunition, and how to clean and store your firearms. The class emphasizes gun safety, and is a great way to introduce your children to firearms and firearm safety. The instructor is an NRA-and Tennessee state-certified handgun safety instructor. Refuse To Be A Victim is designed to offer men and women a variety of options from which they can choose to prepare their own crime prevention and personal safety strategies. This NRA program began in 1993 and continues to lead the way in personal safety instruction in the United States. It is embraced by the law enforcement community and by educators, as a positive tool in teaching personal safety awareness to many segments of the community. The seminar covers how you can enhance your personal security at home, in your automobile, when traveling, when using the telephone and internet, and to prevent fraud, by offering a broad overview of actions both men and women can take to minimize their chances of being victimized. Tai Chi I
This Level I Chen Style T’ai Chi class is designed for persons who are interested in learning the basic principles of an ancient martial art while improving their general health and well-being. Students will be introduced to a four-part system of self-cultivation exercises which includes silk reeling, forms, qigong (chee kung) and push hands. While an accomplished practitioner of T’ai Chi is capable of high levels of self-defense, the primary focus of Level I T’ai Chi is the health benefits of learning and practicing the art. These benefits include better balance, increased range of motion, lowered stress levels, better relaxation, and improved breathing techniques which all combine to improve the over-all health of the student who devotes adequate time to practicing. Self-Help for Common Pain Patterns

Tennessee State/Court approved 4-hour Parent Education Course for Tennessee Judicial District 5 (Blount County) and District 6 (Knox County). Parents must register in advance for the class through Pellissippi State at 539-7167 or 539-7166. Classes are offered every Saturday morning at the Pellissippi Parkway Campus, except for holidays, unless otherwise noted. Classes are also offered once a month on a Thursday evening at the Magnolia Avenue Campus and the Pellissippi Parkway Campus. All instructors have a master’s degree or better in a related field, such as social work or psychology, or are Rule 31 certified mediators.

Motorcycle

MSF Basic Rider Course
This course is aimed at beginning riders 14 years and older. This is the Tennessee state certified licensing Motorcycle Rider Education program. The course provides five hours of classroom work and ten hours of practical riding in a controlled, off-street environment. Course materials are provided including Tennessee Motorcycle Handbook, student workbooks and training motorcycles (125cc-350cc street legal). Some scooters are also available and a request for a scooter MUST be indicated on the registration form. Students must wear a DOT approved helmet (a helmet can be provided if needed), eye protection, full-fingered gloves, over-the-ankle footwear with low heels, long pants (denim or other sturdy fabric), and a long-sleeved shirt or jacket. A registration form must be completed and students must register at least one week in advance. Classes are taught by certified Motorcycle Safety Foundation instructors who assist participants with proper techniques. Students must pass both a written and a riding evaluation to receive a State Certificate Waiver. A certificate of completion for the course exempts the student from taking the written and riding test when applying for a motorcycle license. Class size is limited to 12 students and classes fill quickly, so register early!
Students must cancel one week in advance to get a full refund.

The Basic Rider Course is offered every weekend, with the exception of holiday weekends, from the first weekend in March through the first weekend in November.

Experienced Rider Course
This course is designed for the experienced riders who want to increase knowledge and skill on their own motorcycles. Emphasis is placed on ADVANCED riding skills and handling emergency situations. Participants must have completed the Riding and Street Skills course with three months and 1,000 miles of street riding experience or have two years and 5,000 miles of street riding experience. This course is approved by the Tennessee Department of Safety and provides 6 hours on a motorcycle. All participants must wear required, approved protective gear. Students must furnish their own motorcycle and proof of insurance, and a registration form must be completed one week prior to taking the class. Class is limited to 12 students. Instructors are certified Motorcycle Safety Foundation instructors.

Have you ever wanted to learn to play the mountain dulcimer but didn't know where to get lessons? Have you always wanted to play a musical instrument but didn't think you could? Continue to grow from a beginner dulcimer player. This is a continuation class from "Beginning Mountain (Lap) Dulcimer," SPE 611. We will learn more about DAD cording, explore other tunings, music timing, dulcimer techniques and tones, introduce cross-picking and finger picking, and generally have a good time. Students must already know how to tune their dulcimer, play around 10 different beginner tunes, have or get a capo for their instrument, understand some basics of music timing from the staff and notes, and be able to read dulcimer tabulation. Wire Jewelry Design
Utilizing jewelry wire wrapping techniques using sterling silver square wire and various stones, this class will present basic techniques that can be used to create jewelry out of almost any stone or other irregular shaped object. Scrapbook Studio

This workshop is for anyone who wants a fun day and some time to scrap and has interest in learning new techniques for eye-catching designs. An introduction to the application of principles of photography that are relevant to film-based manually operated cameras and manual focus lenses from 35mm to medium format to large format box cameras.
