Grilled Alligator with Spaghetti Squash Salad

Ingredients

2 spaghetti squash
3 lb alligator meat
Vinaigrette dressing
½ c salad oil
¼ c honey
1c red wine vinegar
1T salt
1T granulated garlic
1T granulated onion
1T dry basil
½ T black pepper
1T whole mustard


Dry rub
Cayenne Pepper
Granulated Onion
Granulated Garlic
Brown Sugar
Ground Cinnamon
S+P


Basting sauce
Tomato Sauce
Cayenne Pepper
Granulated Onion
Granulated Garlic
Brown Sugar
Ground Cinnamon
Distilled White Vinegar


Directions

  1. Combine basting sauce ingredients in a sauce pan and bring to a slight simmer.
  2. Cut spaghetti squash in half and deseed. Roast in 350 degree oven for 45 minutes or until tender.
  3. Remove the strands of squash from the squash with a fork and allow to cool. 
  4. Make vinaigrette by mixing all ingredients together. 
  5. Toss squash with vinaigrette and set aside.
  6. Make dry rub and toss the alligator with the rub, when tossed place on wooden skewers and allow to marinate for at least 4 hours. 
  7. Make basting sauce and set aside.
  8. Grill alligator until it is white in the middle, when it is almost done brush with the basting sauce.
  9. Remove skewers from the grill and top with the squash and serve.
