Roasted Corn Salsa

(Yields 1 gallon)

4 medium tomatoes small diced
12 ears corn on cob
1 green bell pepper small diced
1 red onion small diced
4 green onions small diced
½ bunch cilantro chopped
1/8 c oil
½ c red wine vinegar
1T lime juice
1½ T salt
2T black pepper
1½ T ground cumin
1½ T chili powder

Grill corn until golden brown, mix all of above ingredients and adjust seasoning as needed. Let sit for 1 hour before serving.
